A few steps from piazza Castello, there is this little restaurant with a young and informal feel, offering an original interpretation of regional cuisine – the menu ranges from meat tartare to crunchy egg with Cheddar fondue. The selection of raw materials is almost manic, many ingredients are indeed Slow Food presidia (limited high-quality production that needs safeguarding) like the Nizza Monferrato cardoon. The wine list is very original. If you wish to be aided, there is a tasting menu at 32 euros. Bookings are advised.
